What a private chef handles at a dinner party
Most bookings follow the same arc. You talk through the menu with your chef, usually three to five courses, and flag allergies, dislikes and anyone who doesn't eat meat. The chef shops the day before or the day of, arrives with the groceries and their own knives and tools, cooks in your kitchen, serves each course, and leaves the kitchen clean. You'll confirm exactly what's included with your chef, but that's the shape of an in-home dinner party almost everywhere.
What usually isn't included: tables, chairs, linens and extra plates if you don't own enough, wine and cocktails, and a server for larger groups. Those can often be arranged. Ask when you request a quote rather than finding out the week before.
Plated vs family-style private dinner service
Plated means each course comes out on individual plates, finished in the kitchen. Family-style means platters go down the middle of the table and guests pass them.
Plated suits two to eight guests and occasions that call for a little ceremony: an anniversary, a milestone birthday, the first dinner with the in-laws. Every plate arrives the way the chef intended, and the courses can be paced tightly.
For eight to twenty guests, family-style usually wins. The table talks more, people take the portions they want, and the chef isn't plating 80 dishes across four courses in a home kitchen with one oven. A good middle ground is a plated first course and dessert with the main served family-style. You get the moment of a composed plate and the warmth of passing a platter.
A dinner party with a private chef, hour by hour
Take a 7:00 p.m. dinner for ten in a Loudonville colonial or a Victorian off Broadway in Saratoga. A typical evening runs something like this:
- About 4:00: the chef arrives, unloads groceries and takes over the kitchen while you set the table or get dressed.
- 6:30: guests arrive to a passed bite or a board on the counter, and you pour drinks.
- 7:15: first course, then a salad or pasta, the main and dessert, spaced 20 to 30 minutes apart.
- 9:30: coffee and dessert at the table while the chef breaks down the kitchen.
- Around 10:00: dishes done, leftovers wrapped and labeled, chef out the door.
The arrival time depends on the menu. A braise or anything slow-roasted starts earlier, while a seafood menu might need less time on site. Your chef will tell you how much kitchen time they need and what to clear out of the fridge.
The one thing hosts forget: the chef needs counter space and a clear path to the table. Move the mail, the fruit bowl and the coffee maker before they arrive.
When catering beats a private chef for a dinner party
A private chef is built for a seated dinner of about 2 to 20. Past that, the math changes. One cook in a home kitchen can't plate four courses for 40, and a buffet for 60 in the backyard needs chafing dishes, rental gear and a crew that caterers already own.
Choose catering when you have more than about 25 guests, want a buffet or food stations, or need food served across a venue rather than at one table. Choose a private chef when you want the food cooked fresh in your kitchen, courses timed to the table, and a menu built around your guests. Our private chef vs catering guide breaks the decision down by guest count and occasion. For 20 to 40 people the night before a wedding, see rehearsal dinner catering.
Booking a private dinner party in Albany, Saratoga or Lake George
Pick the date first, then the headcount. Those two drive the quote more than anything on the menu. December weekends fill with holiday parties, and Saratoga's track season (roughly mid-July to Labor Day) books up with rental houses hosting every night. If your date falls in either window, ask early.
We book chefs for dinner parties across the region, from Albany and its suburbs to Saratoga Springs and the lake houses north of it. If you'd rather your guests cook alongside the chef than be served, a private cooking class turns dinner into the evening's activity.
Call (518) 765-7832 or send the form with your date, guest count, town and any dietary needs, and the chef will come back with menu ideas and a quote.
